Wiltshire born Greg has an improbably glittering CV, featuring some of the best starred restaurants in the UK and Scandinavia, with positions held notably as Development Chef for Daniel Clifford’s Michelin starred restaurant Midsummer House, together with time spent at The Ledbury in Notting Hill, Restaurant Tom Aikens, Norway’s Maaemo. More recently Greg got the opportunity to come to Sussex and take over the fine dining restaurant The Pass, at the 5-star South Lodge hotel, for a highly acclaimed 6-month residency.
His passion for sourcing and foraging the best of the British larder paired with an illustrious career and his mastery of the Michelin dark arts, make him one of the brightest talents in the country. Under his creative direction Greg will launch his first restaurant in Brighton, a space now under construction and due to open late 2023; it will focus on “flavour first, produce driven, detail obsessed, fire fuelled cooking”, offering the city a before unseen unique dining experience.
Ali Munro, Wild Flor
Hailing from the east coast of Scotland, Alistair forged a career cooking all over the UK and Ireland, before moving to Brighton in January 2020 (not ideal timing). After initially expressing an interest in joining the Wild Flor team in early 2020, Alistair finally joined Wild Flor full time in the autumn of 2021, swiftly taking the reigns as head chef in December 2021.
Together they have developed the restaurant’s reputation for proper, classic dishes; maintaining the restaurant’s standing in the Michelin Guide, Good Food Guide, Wine List Confidentials Top 100 & Top 5 status in the Brighton’s Best Awards. Alistair & Wild Flor are similarly aligned in their love & admiration for classic French & European cookery; a love of proper sauces & the French style of charcuterie in particular.
Additionally, he founded the ‘Alberta’s’ brand during lockdown. This project was met with local acclaim and a cult following, popping up in various venues across Brighton & Hove. Reviving Alberta’s was always on the agenda & in October ’22 a collaboration of Alberta’s X WF during the local OctoberBest Festival served perfect fried chicken & sparkling wine to over 300 guests once more. Alberta’s looks forward to a more full-blooded comeback in 2023.”
