Nick Bril, The Jane, Two Michelin Stars **
Nick started as a dishwasher in a restaurant. After a year, he got the chance to help in the kitchen, where he would eventually get the taste for gastronomy. At age 19, Nick started working for Sergio Herman (Restaurant Oud Sluis), three Michelin stars awarded chef, and quite immediately he fell in love with the kitchen rock & roll.
To bring balance to busy life as a chef, a connection with music grew that developed into Nick’s second career as a DJ. Creating a unique moment and a great atmosphere are indispensable for both cooking and deejaying.
The Jane first opened its doors in 2014, now holds two Michelin Stars and in 2022 was listed the 23rd best restaurant in the world.
Jean Delport, Interlude, One Michelin Star *
Jean trained at the Zevenwacht Chef School in his native South Africa, where he gained a classical French and English grounding. After chef school, he worked in some of South Africa’s best restaurants, mainly in the Cape Winelands region.
He met Interlude owner Penny Streeter OBE at her Cape Town restaurant, Somerset West, where he worked for several years. She was so impressed with Jean she decided to bring to him to West Sussex to oversee Interlude.
Jean was awarded a coveted Michelin star just 10 months after opening Interlude at Leonardslee Gardens aged just 31.
