Join us at The Pass at South Lodge for the finale of the Table Talk Foundation Sussex Showcase, created by guest chef Rafael Cagali and resident chef Ben Wilkinson.

Price – £250pp (includes 7-course tasting menu, snacks, a glass of Ridgeview sparkling wine. Other drinks sold separately)

Rafael Cagali, Da Terra, Two Michelin Stars ***

Originally from São Paulo in Brazil with an Italian background, Rafael started his career in London at the age of 21. Moving then to Italy to work under Chef Stefano Baiocco at A Villa Feltrinelli where he spent over 3 years.

Growing in his career he decided to go to Spain to work for Chef Quique Dacosta and Martin Berasategui. From there, he returned back to England to join The Fat Duck by Heston Blumenthal to open Fera at Claridges. Leading the Aulis in Fera, Rafael carried on with Simon Rogan as head chef of Aulis.

Opening Da Terra in January of 2019, after 8 months and followed by hard work and dedication, Da Terra Gained its first Michelin star. Following a very eventful 2020, they were awarded their second star in the Michelin guide of 2021.

Rafael Cagali’s experimental cuisine is inspired by the flavours of his origins and influences of his culinary experiences throughout his career.

Ben Wilkinson, The Pass at South Lodge Hotel

Ben’s first foray into the kitchen was two decades ago, when he began working at a golf course restaurant in Derbyshire, which then lead onto his role at The Windows at The Hilton Park Lane in London before taking up a role in the Netherlands at a boutique hotel restaurant in the Hague called Savelberg. It was here that Ben got his first taste for Michelin-level cooking. When returning to the UK he joined the team at Holbeck Ghyll in Windemere for two years, followed by a year at Daniel Clifford’s Midsummer House before returning to Holbeck for another year.

Ben joined The Pass following his success at The Cottage in the Wood, a Michelin-starred restaurant with rooms in the Lake District and was awarded his Michelin Star in 2023.
